My sister gave me this great fish recipe - thought I'd share it with the world. It's light and delish!

Ingredients:
- 3 leeks
- 3 spring onions
- oil/butter
- 2 tsp flour
- 4 oz of white wine or stock
- 2 tbsp milk
- Cod Fillets
- fennel seed
- cracked pepper

1. Preheat oven 375.
2. Take three leeks (white parts) and three spring onions and sauté in 1tbsp of oil or butter and garlic in an oven proof pan until soft.
3. Sprinkle 2tsp of flour and cook 1 minute
4. Add 4oz of liquid (white wine/stock) and 2tbsp of milk.
5. Bring to a boil and take off the stove.
6. Add some salt if using.

It’s not really saucy.

In the meantime, take COD fillets (or other firm white fish), put fennel seed (finely crushed) and freshly cracked pepper on both sides and then place on the leek mixture. Put in the oven at 375 for 10 minutes or until cooked.

Serve! My sister served it with zucchini and summer squash also sautéed/simmered in oil and garlic and stock and then sprinkled with roasted walnuts and parm cheese. YUM!
